Position Overview

The ideal Commis de Rang will be responsible for running the Back of House during service, while working directly with the Kitchen, Service team, and Front of House Managers.

Alain Ducassed at The Dorchester is now seeking a talented Commis de Rang to join their elite team, with the ability of demonstrating Dorchester Collection's values : Personality, Passion, Respect, Working Together and Creativity.

Essential Functions & Physical Requirements

  • You will be responsible for expediting the food / running the pass, i.e. the dishes from the kitchen to the FOH designated area
  • To ensure food is delivered in a professional manner paying attention to cleanliness of dishes and following our standards of service
  • To work closely with the chef running the pass, and the restaurant team following the FOH Manager’s guidance so as to ensure a smooth service.
  • To be able to complete the morning opening mise en place and the duties during the closing shift
  • To study the Dish Descriptions, being able to explain the ingredients, the cooking procedure, the history and background of every dish served in the restaurant
  • To be able and eager to train the very new members that join the company as Commis de rang during their first weeks of service
  • Qualifications and Desirables

  • Previous Michelin service experience or fine dining experience would be an advantage but is not essential
  • Excellent food & beverage knowledge
  • Ability to work under pressure
